Vineyard location and characteristics: The Chardonnay is grown in the Region of Buje, on the hill above the Valley of Ferné. This location has an ideal micro climate for growing wines with a distinctive bouquet.
Vinification and maturing: fast process without maceration, soft pressing, fermentation at 12 – 14 °C . Ageing in steel tanks for at least 5 month, after that secondary fermentation (Liqueur de tirage) - classical method/refermentation in bottle for 1,5 – 2 years . Degorgement (Liqueur d’expedition): topping up with the same wine, no other supplements
Color/effervescence: strow yellow with golden reflections, crystal clear, opulent and persistent mousse of fine bubbles, verry persistent effervescence
Bouquet: Crushed fire stone and fresh bread crust rise up with the foam over the top of the glass. Over this dry expression soon follow exotic fruits like ananas and mango, but those hints of aromas are verry subtly. Then we recognize elegant notes of citrus, while at the end yellow apple rises up.
Palate: Verry dry, fresh sparkling wine, with distinctly elegant expression. All aromas that we have noticed before, now come back, clearly recognizable, but delicate at the palate. Citrus notes are the first impression, but as the espuma takes the palate, flows down the throat, a fine trace of exotic fruit comes up. We recognize a delicious ananas note in the aftertaste.
Food pairing: Exceptionally refined aperitif for most solemn moments, but also a good companion to seafood appetizers, such as raw shrimps and clams.
