Vineyard location and characteristics: The Chardonnay is grown in the Region of Buje, on the hill above the Valley of Ferné. This location has an ideal micro climate for growing wines with a distinctive bouquet.
Vinification and maturing: fast process without maceration, soft pressing, fermentation at 12 – 14 °C . Ageing in steel tanks for at least 5 month, after that secondary fermentation (Liqueur de tirage) - classical method/refermentation in bottle for 12 years . Degorgement (Liqueur d’expedition): topping up with the same wine, no other supplements
Color/effervescence: old gold color, persistent mousse and long effervescence of fine little bubbles
Bouquet: Abundant and intensive aromas of mature fruit and bee honey flow out of the glass, quince marmalade dominates, then a slight hint of bread crust and coriander rise up. Later on mature exotic fruit, like papaya show. The richness and persistence of all aromas is exceptional and tell us a story of a grand and mature wine.
Palate: Particulary harmonic and mature wine, on the one side slight dry, on the other side with rich body and ripe fruity aromas, which spread opulent and persistent throughout the palate. We recognize ripe quince and mature yellow fruits, then later white pepper. All the aromas persist in a long finale.
Food pairing: Be prepared for celebration, for a feast – let us start with lobster, then with white fish in exotic spices such as saffron. We go on with crabs and scrimps in tempura with Japanese mayonnaise, poultry with pumpkin and curcuma, roasted goose and turkey, omelette with Chanterelle mushrooms, soft-ripened cheeses and at the end a desert – not to sweet crepes with wine chateau and walnuts. After all this, take a glass for meditation and along with a fine cigar.
