Vineyard location and characteristics: The largest portion of the grape needed for this wine has been harvested on white soil on the location of Contarini, while the Teran grapes stems from the red soil near Umag. We have tried to achieve to right proportion of two different terroirs, both of which reflect their minerality, each in their own way.
Vinification and maturing: Alcohol fermentation begins at the temperature of 25 to 28 ºC for 15 to 20 days. The malolactic fermentation and the maturation period take place in stainless steel barrels over the course of 18 months, after which the wine is coupaged and after a few months sent to bottling. Bottled wines are further matured for a period of 3 months allowing us to achieve an exceptionally smooth, fruity and honest wine.
Color: Ruby red
Bouquet: The nose firstly notices ripe cherries, followed by a delicate opening of raspberry which is soon accompanied by mild traces of game, until the air finally reveals notes of dried black currant. The finish carries mild hints of red rose petals and black truffles.
Taste: The impression on the palate closely follows the fragrance of fruitiness and floweriness, the mouth are full and warm, well balanced by a mild freshness, making the wine tasty and moderately mineral. The presence of tannins is palpable, yet they are delicate and soft.
Gastronomic recommendation: This blend of three wines in soft and fruity, yet rich and complex, without any pretentiousness or additional weight. An exceptional representative of a mineral “all-rounder”, this wine is suited for a plethora of dishes and occasions. Here are a few examples: Veal cooked in own juices and in a sauce of red wine, light game goulash with black truffles and gnocchi, meat dishes with truffles or steaks with cranberries, roasted lamb and moderately-aged cheeses.
