Vineyard location and characteristics: The vineyards are spread over the hills around the city of Buje at a height of 220 to 250 meters above the sea on the mineral-rich white soil. On its best locations, the grape of this vintage yielded exceptionally concentrated aromas, so we selected a limited area where it was left to dry on the vine before harvesting it.
Vinification: every variety and vintage separately – from cold fermentations of regular vintages, to late harvest and beery selections
Ageing: some in steel tanks, some on fine yeasts, other in wooden barrels of different size and age. After separated ageing, assembling to one wine, resting for some time and finally for 1 year in bottle
Color: deep old gold, big tears are running slowly down the side of the glass, wine moves heavy and slow around the glass
Bouquet: Plenty of rich and worm aromas of ripe fruit rise out of the glass. First dry figs line up in row with exotic fruits, dry apricots, then dried flowers and herbs of a Mediterranean meadow. Vanilla comes up, in the end a hint of nuts. Aromas are pure, durable, numerous and intensive, they talk about elegancy and rich bouquet of aged and serious wines. It announces a strong body.
Palate: At a first sip, the wine is warm and round, but in perfect balance with notable freshness, moderate minerality and barely noticeable tannins. The harmony is competed by rich and franc fruity aromas, which are spreading in waves over the entire palate, just to make space for the freshness. Long, soft and tasteful aftertaste is carried by exotic fruits and curcuma.
Food pairing: These luxurious and strong cuvée is and ideal company to foie gras, in general to more rich and fatty foods, but also goes well with exotic Asiatic seasoned meals and ginger. A nice food pairing is lobster in mayonnaise, or poultry with honey and herbs and well aged cheeses. Or just as a meditation wine, to enjoy and linger.
